For large producers Rye whiskey, the proportions are typically about 51% rye, 39% corn, and 10% malted barley. Rye grain is known for imparting what many call a spicy, robust characte or fruity flavor to the whiskey. The use of new charred-oak barrels imparts more of its own flavors of oak, caramel, and vanilla into the whiskey.
Rye whiskey largely disappeared after Prohibition and only a few brands, survived it such as Old Overholt, the Sazerac company with Colonel E. H. Taylor, Sazerac Rye, Thomas H. Handy, and various smaller companies.
