Whiskey was introduced to America, one of the world’s largest producers, by the immigrants and pioneers. European immigrants found that it was easier to grow rye here than barley, the main ingredient in scotch. American whiskey is quite different from Scottish or Irish whiskies and there are six different categories: bourbon, Tennessee, rye, corn, wheat and blended whiskies, each with their own unique ingredients or production methods.
In 1860, the men of Pike County, Missouri set the standard for keeping your word. Due to a lost bet, one of the men grew a beard of astonishing length. As uncomfortable as his fantastic follicles were, he never wavered. It wasn’t long before others followed suit, but none were as majestic or long as the 12-foot beard. New York Wheat is distilled cleaner than more typical whiskeys. This method highlights the beauty of using wheat in a mash bill: a smoother, more gentle base lets the intense oak-contributed flavors be the focus. 1 to 2 years in the warehouse achieves the best balance.
Balcones Texas Single Malt Whiskey is made from 100% malted Golden Promise barley. Golden Promise is an early-maturing spring barley that has a depth of flavor ideal for single malts. All of the barrels used are bespoke casks made from fully yard-aged oak with custom toast.
Bernheim Original Straight Wheat Whiskey was the first truly new variety of American straight whiskey introduced since Prohibition. Heaven Hill’s Master Distillers saw an opportunity to give today’s whiskey connoisseurs a unique taste experience. This whiskey uses Wheat as the primary ingredient rather than corn, making it essentially a “new” classification of whiskey. Others have followed suit in recent years, perhaps most notably Masterson’s. Wheat lends a slightly lighter, sweeter flavor to whiskey than rye, which is the more typical secondary mash grain with a softer texture in the mouth than corn.
Bowen’s Small Batch California Whiskey is a true artisan small batch American Whiskey made from 100% corn mash, aged with hand selected Red Oak that has been naturally charred by forrest fires from the central California Piute Mountains. Bowen’s Whiskey does very well in new and traditional cocktails or other mixed drinks not normally using whiskey like a Bloody Mary or a Margarita.
Carstairs White Seal Whiskey is a blend of Bourbons, grain Whiskeys, and neutral spirits. The “white seal” was used as a mascot in advertising. Some of the old ad materials from the 1950s are current collector’s items.
Coldwater Whiskey is inspired by and named for a creek of spring water running near St Genevieve, Missouri. It is a younger styled whiskey, spending 2 years in oak before bottling. This suggests a more grain-forward flavor rather than the more customary vanilla/caramel oak-driven notes.
Early Times Kentucky Whiskey is gently cycled through barrel char layers up to eight times a year, creating smooth, easy-to-drink whisky. The Early Times mashbill contains more rye than many other whisky recipes. Only charred American white oak barrels are used to mature Early Times. Early Times is a Kentucky Whisky because it is aged in seasoned oak barrels for added smoothness without sacrificing taste.
